Gimlet at Cavendish House is a bar first restaurant second!
Gimlet is located in the CBD's historic Cavendish House in Russell St.
One of Melbourne's most successful restaurateurs is defying COVID-caused gloom to launch his ninth venture.
Andrew McConnell will open the doors to Gimlet in the CBD's historic Cavendish House in Russell St.
Named after the famed gin-and-lime cocktail the eatery will be a day-throughnight venue offering cocktails and coffee and a seafoodheavy menu of classics.
"The space reminds me of historic big-city restaurants in London or New York the sort we don't really have here" McConnell said of the venue's French marble bar leather booths and dark bentwood chairs.
Until restrictions ease Gimlet will serve set menus at lunch and dinner.
