Named after Italian distiller Antonio Carpono, who invented Vermouth in c.1796 and created the foundation of today's modern aperitifs.
Since post war immigration, Melbourne welcomed the first Italian migrants who arrived by ship into, Port Melbourne's Station Pier.
Their influence has been profound in shaping Melbourne's bar and dining scene.
From the small Italian suburban cafes and coffee shops to the fresh produce stalls found at the historic South Melbourne Market. The Italian story sowed the seed for Melbourne's dining culture as we know it.
Today it has been transformed into a vibrant and energetic foodie's paradise that awakens the heart and delights the senses.
Mr Carpano - dining room is under the charge of Executive Chef Trent Whelan, who brings 25 years of passionate Italian cooking to Novotel Melbourne South Wharf.
Chef Whelan has curated a menu of rustic and seasonal Italian dishes; sourced from a hand selected group of market growers, farmers and local suppliers have ensured Italian dining authenticity.
The signature menu items will be a Salumi bar, homemade pizza and pasta dishes, antipasti, curated cheese selection and traditional Italian desserts served family style.
Mr Carpano - bar has been inspired by the Italian and Melbourne love of al fresco dining (translation, "the cool air"). Boasting two outdoor terrace's that provide postcard skyline views across South Wharf and our golden exterior facade.
As the sun sets across South Wharf, the terrace bar window opens for Aperitivio hour. Serving up a range of Italian cocktails and aperitifs including Montenegro, Aperol, Campari and Vermouth based Martini's as a nod to Antonio Carpano.
In addition, there is local craft beers, ciders and an extensive wine list specialising in Victorian and Italian varietal sourced locally. In the tradition of Aperitivio hour, the bar menu serves crispy moorish Italian treats ideal for sharing.
