The Eau de Vie Team is opening an opulent 30s-Style Cocktail and Champagne Bar in the CBD.
Nick & Nora's will open in the new 80 Collins development and boast a luxe 30s-inspired fit-out and a 400-strong Champagne collection.
Things are shaping up at the new 80 Collins Street development, and it's not even scheduled for completion for another year. But joining the new eatery from team Sepia, as well as a three-level farm-to-table concept will be a luxury speakeasy that comes courtesy of a Sydney hospitality group.
Nick and Nora's is the latest cocktail and Champagne-focused establishment from Speakeasy Group which currently numbers at six venues, with its latest expected to open its doors in early 2020. It's a 240-seat drinking den with a passion for excess, promising a focus on cocktails, Champagne, cognac and caviar. Sitting pretty in the Paris end of Collins Street, the Melbourne outpost was a natural progression for owners Sven Almenning and Greg Sanderson who only welcomed their most recent bar, a Parramatta-based drinking hole, back in October.
Melbourne's Nick and Nora's is set to be physically just as lavish as its menu, and will be spread across five distinct spaces and three separate balconies. Named in an ode to fictional murder solving duo Nick and Nora Charles from Dashiell Hammett's novel The Thin Man, the bar has been inspired by the couples' legendary soirées and love for Champagne. Art Deco has formed a central theme when it comes to interiors, as has the alcohol itself, which is displayed as a part of a five-metre-long climate-controlled controlled cabinet. It's in this 400-bottle-strong collection that you'll find a gaggle of the world's most revered and exclusive Champagnes.
But for those not fans of bubbles, the bar will also be well versed in cocktails. With sections named in honour of Nick and Nora's famed party guests, drinks range from The Snitch (sours) to the Hollywood Starlet (Champagne cocktails).
And should you like your time at Nick and Nora's you are welcomed to involve yourself in the business. The bar's co-owners have refused to take the traditional path when it comes to raising equity. Instead, Speakeasy Group has launched an equity raising campaign through crowdfunding platform Birchal. Up to 10 per cent of the business is currently available with investments from as little as $500 and up to $10,000.

It's great that the equity crowdfunding regime now allows us to do this,"explains Almenning. "We pride ourselves on pushing boundaries to create world-class, memorable and exciting drinking and dining experiences. Nick and Nora's brand combined with the 80 Collins Street address will do exactly that."
